Gooey Almond and Coconut Chex Mix is a family favorite! We make it every Christmas to give to the neighbors because it makes a HUGE batch. Perfect for parties or a movie night.
This gooey Chex mix recipe was a staple in our house every holiday season growing up; A few years ago I even made about 10 batches and took them to our neighbors as Christmas presents.
It's easy to put together, kids can help make it, and it's ready to eat in less than 15 minutes.Warning: it is super addictive.
I have absolutely no control when I do this, I just can't stop nibbling. I even had it for breakfast this morning. They're cereal, right?

Ingredients in Gooey Almond Coconut Chex Mix:
- Chex ricecereal
- sweetened coconut
- Sliced almonds (you can also use slivered almonds)
- sugar
- butter
- corn syrup
- sal

Tips for making the Gooey Almond and Coconut Chex mix:
- It's important to use a big bowl to make this recipe because it makes a ton, and it's also very hard to stir, so it can get a bit messy. This is theTHE BOWLthat I used in the photo above (you can alsouse two bowlsif you don't have a huge bowl).
- you will also wantspray container with nonstick cooking spraybecause once you add the gooey goodness it will stick like crazy.
- While cooking the sticky mixture on the stove,mix constantlybecause it will burn easily.
- If it starts to boil, justput out the firea little.
- use abig wooden spoonto mix everything in the bowl.

How to make Gooey Almond Chex Mix:
- Spray a LARGE bowl (as big as you can find) with nonstick cooking spray.
- Dump the entire box of Chex, coconut cereal and almonds. Mix gently.
- Combine sugar, butter, light corn syrup, and a pinch of salt in a medium saucepan over high heat.
- Bring to a boil, lower the heat to medium, and cook for three minutes, stirring constantly.
- Pour over the cereal mixture in a large bowl and stir evenly.
- Spread the cereal evenly on parchment paper (I only spread parchment paper on the counter) and let cool.
- After it cools down, you can pack it in cellophane bags and share it with neighbors and friends. Or put it in a bowl and eat it (I love it when it's hot and gooey!).
- You can also store it in an airtight container or Ziploc bag and it will last you a few days.

- 14 ounces Rice Cereal Chex
- 7 ounces sweetened coconut cracked
- 5 ounces almonds
- 1 ½ cups sugar
- ¾ glass butter
- 1 ¼ cups corn syrup

Spray a LARGE bowl (as big as you can find) with nonstick cooking spray.

I took this to school for a reunion and everyone loved it. I'm not sure I mixed the corn syrup and cereal well. Kind of built on waxed paper. I also added chocolate chips to the milk after it cooled.

Let's try again... silly sticky fingers. I made this and I LOVED the flavors, but I didn't like that it was sticky. Is there a way to make it drier like other chex mixes? I can't keep my fingers out of the bowl.

Maybe I did something wrong? But it is very sticky. If I reduce the corn syrup to 1 cup and 1/2 cup butter, will I get a slightly lighter version?

This is a sticky and chewy chex mix. It's not meant to be dry, which is why "sticky" is in the recipe title. You could add a little more cereal to the mix and it wouldn't be as sticky. I hope this helps.

This is good for about 4-5 days in an airtight container. But to be honest, it doesn't last long! It is our favourite. You should be fine doing this 3 days ahead of time. Just make sure it's closed tight.
